Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped

  • 1 tablespoon turmeric powder
  • 2 large carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 6 cups bone broth (or vegetable broth)
  • 2 chicken breasts, cooked and shredded (or substitute with tofu for plant-based)
  • 1 cup spinach
  • 1 tablespoon apple cider vinegar (with the mother)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)
  • 1/2 lemon, juiced

Directions:

  1. Heat olive oil in a large pot over medium heat. Add the onion and sauté for 3-4 minutes until softened.
  2. Add garlic, ginger, and turmeric powder, and cook for another 1-2 minutes until fragrant.
  3. Stir in the carrots and celery, cooking for 5 minutes.
  4. Pour in the bone broth and bring to a boil. Reduce heat and let it simmer for 15 minutes, or until vegetables are tender.
  5. Add shredded chicken, spinach, apple cider vinegar, salt, and pepper. Cook for 5 more minutes.
  6. Stir in the lemon juice and garnish with fresh parsley before serving.
